Eating Seasonally in February | Glass Jars and Bottles

Despite being one of the coldest and wettest months of the year, February is a great season for vegetable produce in the UK and whether you have been growing your own or just want to make use of what is abundant in the supermarkets, we’ve got some great ideas for you to cook up this month. All of our recipes can be stored in glass jars with lids, extending their shelf life and giving you delicious treats to enjoy all year round.

Beetroot

This delicious root vegetable is naturally sweet and is packed full of vitamins and works brilliantly with a number of meals. Pickled beetroot is deliciously balanced between sweet, salty and sour and adds a savoury crunch to sandwiches, salads or burgers and its vibrant colour makes eating with the eyes just as pleasant. To preserve this, simply cook off the beets in the oven until they are soft, then pop in glass jars with lids before pouring on a pickling liquid made from vinegar, sugar, salt and any spices or herbs that you enjoy the flavour of.

Apples

There’s nothing quite so quintessentially British as an apple and with so many varieties with unique taste profiles it is great in sweet and savoury dishes alike. We recommend storing apple chutney in glass jars with lids, ready to pop onto a cheese board, slather on a pork pie or spread on a thick sandwich! To make a chutney, simply peel and chop the apples down to a chunky size and add them to a pan with sugar, water, vinegar and some spices, bring to the boil and simmer until the mixture wrinkles on a cold plate.

Cabbages

Cabbages, onions and carrots are all in season this month and when chopped finely or grated and mixed with mayonnaise or salad cream, they make delicious coleslaw! If you’re feeling adventurous you can make your own mayonnaise using eggs, salt, vinegar and olive oil, then mix it all together in a bowl before storing in the fridge in glass jars with lids.
